Not a shortened list — none. No analytics tag, no advertising pixel, no fonts fetched from somebody else's server. The app you sign in to needs one cookie to keep you signed in, and that is the whole story.

Why there is no consent banner
A banner is required when a site stores something it does not strictly need — analytics, advertising, profiling. This site stores nothing at all, so a banner would be asking permission for a thing that never happens.
Strictly necessary means what it says
A sign-in cookie is not a tracking cookie. It carries a random token that means "this browser is signed in", it is read only by the server that issued it, and it tells us nothing about where else you have been.
What your own customers see
Your booking page follows the same rule. Unless you switch on spam protection, a customer can book without anything being stored beyond the session they asked for by signing in.
Clearing them
Every browser can delete cookies and refuse new ones. Refusing the sign-in cookie means you cannot stay signed in — that is the cookie doing its only job, not a setting we control.
